Where it comes from
A stroll through the alleys of Italy, past the cheese dairy, the pasta workshop and the vegetable stall. That is where what ends up on your plate comes from.
The dough
Rests for a long time before it goes into the oven.
The tomatoes
San Marzano, grown in the volcanic soil of Vesuvius.
The cheese
Burrata and fior di latte from Italian producers.
The pasta
Fresh from a small producer in southern Italy. Nobody there gives away the recipe.
